What Is Gluten?
Gluten is a protein found in wheat, barley, and rye.
It helps dough stretch and gives baked goods structure.
For some people, eating gluten can lead to serious health reactions — which is why we keep everything here gluten-free.
Celiac Disease
Celiac disease is an autoimmune condition.
When someone with celiac eats gluten, their immune system attacks the small intestine, which can affect nutrient absorption and long-term health.
Common symptoms may include:
Stomach pain, bloating, or diarrhea
Fatigue or “brain fog”
Skin irritation or rash
Weight loss or anemia
Even tiny amounts of gluten — crumbs or shared equipment — can trigger a reaction.
Non-Celiac Gluten Sensitivity
Some people react to gluten without having celiac disease.
This condition is called Non-Celiac Gluten Sensitivity (NCGS).
Possible symptoms:
Bloating or stomach discomfort
Headaches
Tiredness or foggy thinking
NCGS does not damage the intestines, but it still causes discomfort.
Wheat Allergy
A wheat allergy is different from celiac disease.
It is an allergic reaction to proteins in wheat (not only gluten).
Reactions may include:
Hives or itching
Swelling
Difficulty breathing
In severe cases, anaphylaxis
People with wheat allergies must avoid wheat entirely, though they may tolerate gluten from other grains.
Cross-Contact Matters
Even tiny crumbs or shared equipment can cause a reaction for people with wheat allergies.
Separate prep areas, utensils, and storage are key to safety.
Is gluten-free food healthy?
Not always. “Gluten-free” doesn’t automatically mean healthier — it just means the product doesn’t contain gluten. Some gluten-free foods are made with wholesome ingredients, while others are still treats that should be enjoyed in moderation. For people with celiac disease or gluten sensitivity, gluten-free options are essential for their health.
Gluten Allergy: Need-to-Know Facts
A gluten allergy is often confused with celiac disease, but they are two different conditions. A true wheat allergy is an allergic reaction to proteins found in wheat, while celiac disease is an autoimmune response specifically triggered by gluten. Wheat allergy symptoms can appear quickly — sometimes within minutes — and may include hives, swelling, nausea, or trouble breathing. In rare cases, the reaction can be severe, known as anaphylaxis.
Wheat can be hidden in many foods such as sauces, soups, breaded items, and certain snacks, which makes careful label reading extremely important. It’s also important to know that “gluten-free” does not always mean “wheat-free,” because some gluten-free products may still contain wheat derivatives unless clearly labeled otherwise.
Cross-contact is another major concern. Even tiny crumbs or shared equipment can trigger a reaction in someone with a wheat allergy, which is why safe preparation and separate utensils are necessary. While some children may eventually outgrow a wheat allergy, many adults do not, and continued caution is needed. True gluten allergies are rare, but gluten sensitivity — which can cause discomfort without triggering an allergic response — is much more common.
Celiac Awareness Month
Spreading Knowledge. Supporting Our Community.
Every year in May, we recognize Celiac Awareness Month — a time dedicated to educating, supporting, and empowering those living with celiac disease. Celiac disease is an autoimmune condition where eating gluten causes the body to attack the small intestine. Even the smallest trace of gluten can trigger symptoms and long-term health issues, which is why awareness is so important.
Celiac Awareness Month encourages people to learn more about the signs of celiac disease, the importance of early diagnosis, and the daily challenges many individuals face while maintaining a strict gluten-free lifestyle. It also highlights the need for safe food practices, clear labeling, and inclusive options for those who rely on gluten-free foods for their health — not just preference.
At GF Vibez, we are proud to support the celiac community by offering delicious products made in a fully gluten-free environment. We take cross-contact seriously, use trusted ingredients, and maintain safety standards that help every customer feel confident and cared for.
Celiac Awareness Month is more than a reminder — it’s a celebration of strength, understanding, and the growing support for gluten-free living. Together, we can help raise awareness and make life safer and more enjoyable for everyone affected by celiac disease.
